Carrot Cake. For those of you who have tried my moist rich carrot cake, here is the secret: For a richer flavour you can substitute oil with butter. For a healthier option substitute refined flour with whole wheat flour. So here are the ingredients for my Carrot Cake: 2                  Eggs 1 cups          Sugar Veg oil/.       3/4 cup Butter Milk.           to lighten the batter (sometimes you might not need to add this) Flour.           1 cup BSoda         1 tsp (baking soda or soda bicarbonate) Salt              a pinch Nutmeg        1/4 tsp Cinnamon    1 tsp Dry ginger   1 tsp Grated carrots   2 cups   walnuts             1/2 cup Now, in another large bowl mix in the soft butter / veg oil (any oil which...

True To Your Style Brownie. Here’s my take on a rich melt in your mouth brownie…  Brownies should be gooey, melty, really chocolatey and rich.  But it need not be the same for you.  The ingredients for a basic brownie are  Butter  1/2 cup  Sugar 1/2 cup Brown sugar 1/2 cup Vanilla 1 tsp Coco powder 1/3 cup  Flour 1/2 cup  Salt a pinch  Baking powder 1/4 tsp  Chocolate chunks.. 1/2 cup   Now here is the thing..this is the basic brownie recipe..when I had made this..it was too sweet to my taste and not chocolaty enough. The “richness” that I wanted was missing. So here are my tweaks: Eggs 2 Butter  3/4 cup Sugar 1/2 cup   (omit this) Brown sugar 1/2 cup ( or omit this) Vanilla 1 tsp   (1/4 tsp) Coco powder 1/3 cup Flour 1/2 cup Salt a pinch Baking powder 1/4 tsp Chocolate chunks.. 1/2 cup ONE AND A HALF C...

Herb Butter Here is a simple herb butter which can be used to sauté your vegetables or your meats.. Butter 200 gms. Fresh basil  a small bunch- 8-10 leaves. Fresh parsley double the bunch of basil 50 gms. Salt  1/4 tsp (if the butter you have used is unsalted) Chilly flakes  1tsp Pepper powder as per your taste Garlic 6-7 cloves. Oregano 1/2 tsp Method: Crush the garlic real fine and fry them with a little bit of butter so that the flavour of garlic is really infused in the butter. Add the chilly flakes, pepper and salt. Now, take a large bowl, mash up the room temperature butter till it becomes really soft. Next, chop the basil and parsley real fine and mix it with the butter. Add in the butter infused garlic and all into bowl and mix well. Your very own herb butter is done. Use this butter for basting your meats or grilling your vegetables or just apply a generous amount on toasted bread and sit back with hot cup of coffee. You can make your own ...
